I just made myself a really tasty stir fry. I think this one tops all the other stir fries I’ve made. I always end up making either salad or stir fry or a combination of the two for lunch because that’s all I have time for on most days.
- Olive oil
- Leftover quinoa cooked in vegetable stock
- Red cabbage
- Red bell pepper
- Carrot
- Button mushroom
- Spinach
- Broccoli
- Yellow onion
- Garlic
- Ginger
- Salt and freshly ground black pepper
- Diced avocado on top
And it was a huge bowl and I ate it ALL. Good lord. Food coma.
